Italian ewe cheese
Pecorino is an Italian cheese made from sheep's milk, typically hard and sharp-flavored.
Several regional varieties exist: pecorino Romano, pecorino Sardo, pecorino Toscano.
The cheese is often grated over pasta dishes: Cacio e pepe calls for pecorino, not Parmesan.
Younger versions are softer and milder.
