gorgonzola

Veined Lombardy cheese

Gorgonzola is an Italian blue cheese, creamy and pungent, with characteristic blue-green veins of mold running through pale yellow paste.

It ranges from mild and soft (dolce) to firm and sharp (piccante).

Named for the town near Milan where it originated: a salad topped with crumbled gorgonzola, gorgonzola sauce for pasta.
