romano
Italian bean type
Romano is a hard, sharp Italian cheese made from sheep's, cow's, or goat's milk, used for grating over pasta dishes.
Pecorino romano, made from sheep's milk, is the most traditional variety.
The cheese adds a salty, tangy bite: Finish the cacio e pepe with freshly grated romano. (Capitalized Romano refers to people or things from Rome.)
