cave-aged
Underground cellar matured
Cave-aged describes food—especially cheese—that has been matured in a natural or artificial cave environment.
The consistent cool temperature and high humidity of caves create ideal conditions for aging, developing distinctive flavors and textures: cave-aged cheddar, cave-aged Gruyère.
The term appears on labels as a mark of traditional or artisanal production methods.
