pecorinos

Italian ewe cheeses

Pecorinos are Italian cheeses made from sheep's milk.

The name comes from *pecora*, Italian for sheep.

Several regional varieties exist—Pecorino Romano, Pecorino Toscano, Pecorino Sardo—each with distinct aging and flavor profiles ranging from mild and creamy to sharp and salty.

Aged pecorinos are often grated over pasta, similar to Parmesan: I finished the cacio e pepe with freshly grated pecorino.
