fresh mozzarella

Milky Italian cheese

Fresh mozzarella is a soft, mild Italian cheese with a moist, springy texture, typically sold in water or whey rather than shrink-wrapped.

It's made from cow's milk (or water buffalo milk for *mozzarella di bufala*) and meant to be eaten within days of production.

Unlike the firmer, drier mozzarella used on pizza, fresh mozzarella appears in caprese salads and bruschetta: The fresh mozzarella was still warm from the cheese shop.
