ricotta

Soft Italian cheese

Ricotta is a soft, mild Italian cheese with a slightly grainy texture, made from the whey left over from producing other cheeses.

It appears in lasagna, stuffed shells, and cannoli.

Unlike aged cheeses, ricotta is fresh and perishable: fresh ricotta from the farmer's market, a dollop of ricotta on the pasta.
