kalua pig
Underground-roasted swine
Kalua pig is a traditional Hawaiian dish of slow-cooked pork, originally prepared in an underground oven called an imu.
The meat is seasoned with sea salt, wrapped in banana leaves, and cooked for hours until tender and smoky.
It's a centerpiece of luaus and Hawaiian gatherings: The kalua pig was fall-apart tender.
Restaurant versions often use liquid smoke to approximate the flavor.
