earth oven
Buried cooking chamber
An earth oven is a cooking pit dug into the ground, heated with hot stones or coals, then covered to trap heat and steam.
Food cooks slowly underground, often wrapped in leaves.
Variations appear across cultures—the Hawaiian imu, Māori hāngī, and New England clambake all use this ancient method: We roasted a whole pig in an earth oven.
