geoducks

Long-necked clams

Geoducks are large burrowing clams native to the Pacific Northwest, prized as a delicacy in Asian cuisine.

The name comes from a Lushootseed word meaning "dig deep"—these clams burrow several feet into sand and mud, extending a long siphon that can reach three feet.

Pronounced "gooey-duck" despite the spelling.

We ordered geoduck sashimi at the Japanese restaurant.
