sea urchins
Ocean's pincushion creatures
Sea urchins are spiny marine animals with spherical shells, found on ocean floors worldwide.
The shell, called a test, is covered with movable spines that provide protection and locomotion.
Some species are harvested for their roe, considered a delicacy in Japanese cuisine (uni) and Mediterranean cooking: We ordered sea urchin at the sushi bar.
