geoduck

Long-necked clam

A geoduck is a very large burrowing clam native to the Pacific Northwest, prized as a delicacy in Asian cuisine.

The clam is notable for its long siphon, which can extend several feet and cannot retract into the shell.

Pronounced "gooey-duck," the name comes from a Lushootseed word.

Fresh geoduck is served raw as sashimi.
