littleneck clams
Bite-sized hard-shells
Littleneck clams are small hard-shell clams, the youngest and smallest size harvested from the quahog species.
Prized for their tender meat and mild, briny flavor, they're typically served raw on the half shell or steamed: a dozen littlenecks with drawn butter.
The name comes from Littleneck Bay on Long Island, once a major harvesting area.
