Crudo is a dish of raw fish or seafood, typically sliced thin and dressed with olive oil, citrus, and seasonings.
The Italian word for "raw" distinguishes this preparation from ceviche, where acid "cooks" the fish.
Crudo appears on upscale restaurant menus as an appetizer: We started with the tuna crudo.
