fillets

Fish without bones

Fillets are boneless cuts of meat or fish, typically flat and uniform in thickness: salmon fillets, chicken breast fillets.

The word also names narrow strips or bands used decoratively in architecture and design.

To fillet is to remove bones from fish or meat: She filleted the trout with practiced hands.

In American English, the t is usually pronounced; in British English and culinary contexts, it's often silent (fil-AY).
