broiled
Cooked from overhead
Broiled describes food cooked by direct exposure to high heat from above, as in an oven's broiler: broiled salmon, broiled steak.
The method produces a browned, slightly charred exterior while keeping the interior moist.
Figuratively, broiled can mean uncomfortably hot: We sat broiled in the summer sun.
