monkfish
Bottom-dwelling ocean dweller
Monkfish is a large, bottom-dwelling fish with a broad, flattened head and an enormous mouth.
Despite its grotesque appearance, the tail meat is prized for its firm, lobster-like texture: Pan-seared monkfish with brown butter.
Also called goosefish or anglerfish, it's common in European and American Atlantic waters.
