turbot

Prized European flatfish

Turbot is a large European flatfish prized as a food fish, with firm white flesh considered among the finest of any flatfish.

It has a broad, diamond-shaped body with both eyes on the left side.

The name sometimes extends to similar flatfish in other regions: We ordered the turbot with brown butter.
