entrecôte
Rib steak, French
Entrecôte is a premium cut of beef from between the ribs—a French term literally meaning "between the ribs." It's essentially a boneless rib steak, prized for its marbling and tenderness.
Common on French restaurant menus and in European butchery: I ordered the entrecôte with béarnaise sauce.
