charring

Scorching until black

Charring is the process of burning something partially so that it blackens on the surface without being consumed entirely.

Wood, meat, and vegetables can all be charred, sometimes intentionally for flavor or preservation, sometimes accidentally.

The grill left a nice charring on the peppers.

Charring also refers to the residue left behind—the blackened, carbonized material that remains after partial combustion.
