Small ridged pasta
Cavatelli are small pasta shapes, typically short and rolled with a slight hollow in the center that catches sauce.
The name comes from Italian for "little hollows." Made from semolina or ricotta dough, they're traditional to southern Italian cooking: cavatelli with broccoli rabe, cavatelli in marinara sauce.
