Little ear noodles
Orecchiette is a type of pasta shaped like small ears—the name comes from Italian for "little ears." The concave discs, about the size of a thumbnail, are traditional to the Puglia region of southern Italy.
The shape catches chunky sauces well: orecchiette with broccoli rabe and sausage.
