brochettes

Food on sticks

Brochettes are skewers of meat, fish, or vegetables grilled or broiled over heat—the French term for what Americans often call kebabs or kabobs.

The word appears on menus and in recipes to suggest refinement: lamb brochettes with rosemary, shrimp brochettes on the grill.

A brochette is also the skewer itself.
