milled rice
Polished grain product
Milled rice is rice that has had its husk, bran, and germ removed through mechanical processing, leaving only the starchy white endosperm.
This is the polished white rice most commonly sold in grocery stores, as opposed to brown rice which retains its bran layer.
The milling process extends shelf life and reduces cooking time but removes much of the grain's fiber and nutrients.
She prefers milled rice because it cooks faster than whole grain varieties.
