applejack

Distilled cider spirit

Applejack is a strong alcoholic drink made from apples, traditionally produced by freezing hard cider and removing the ice to concentrate the alcohol.

The technique, called freeze distillation or "jacking," gave the spirit its name.

Applejack was especially popular in colonial America when apples were abundant and distillation equipment scarce.
