kirsch
Black Forest brandy
Kirsch is a clear brandy distilled from fermented cherries, particularly the small black cherries of Germany and Switzerland.
The name is short for Kirschwasser, German for "cherry water." It appears in cooking—notably in fondue and Black Forest cake—where its sharp, dry flavor cuts through richness: Add a splash of kirsch to the chocolate.
