tofu skin
Bean curd sheet
Tofu skin is the thin, slightly chewy film that forms on the surface of heated soy milk, skimmed off and used as a food product in East Asian cuisines.
It may be sold fresh, dried, or frozen, and appears in dishes ranging from stir-fries to soups to vegetarian preparations where it often mimics meat textures.
Also called yuba (Japanese) or bean curd skin, it has a delicate, subtly sweet flavor and high protein content.
