mock duck
Vegetarian poultry substitute
Mock duck is a vegetarian substitute for duck, typically made from wheat gluten (seitan) or tofu, often flavored and textured to resemble the real thing.
It appears frequently in Chinese Buddhist cuisine and vegetarian Asian restaurants: The mock duck in black bean sauce was surprisingly convincing.
The term also names a way of folding a napkin.
