tobiko

Flying fish eggs

Tobiko is the roe (fish eggs) of flying fish, used as a garnish or ingredient in Japanese cuisine.

The tiny, crunchy orange beads appear on sushi rolls, in poke bowls, and as a topping for rice dishes.

Tobiko is sometimes dyed other colors—green with wasabi, black with squid ink, yellow with yuzu: The roll was topped with bright orange tobiko.
