microgreens
Edible baby plants
Microgreens are vegetable greens harvested just after the first leaves develop, typically one to three weeks after germination.
Smaller than baby greens but larger than sprouts, they're prized for concentrated flavor and nutrition: a salad topped with microgreens, microgreens add color and texture to any dish.
Popular varieties include radish, arugula, and sunflower.
