tagines

North African dishes

Tagines are North African stews named after the distinctive conical clay pot in which they're traditionally cooked.

The cone-shaped lid traps steam and returns moisture to the dish, allowing tough meats and vegetables to braise slowly with aromatic spices like cumin, cinnamon, and saffron.

The word refers both to the cooking vessel and to the slow-cooked dishes prepared in it.

We ordered lamb tagine with apricots and almonds.
