confit

Slow-cooked in fat

Confit is a method of cooking meat slowly in its own fat, then storing it submerged in that fat—traditionally a preservation technique.

Duck confit is the classic example: duck leg confit with crispy skin.

The term now extends to anything slow-cooked in fat or oil, including garlic confit or tomato confit, where the preservation aspect matters less than the tender, rich result.
