scotch bonnet

Fiery island chile

A scotch bonnet is a small, intensely hot chili pepper shaped like a tam-o'-shanter—the traditional Scottish bonnet that gives it its name.

Common in Caribbean cooking, it has a fruity, slightly sweet flavor beneath the heat: Jerk chicken gets its kick from scotch bonnet peppers.

The pepper rates among the hottest commonly available, comparable to habaneros.
