saltfish

Dried, salted catch

Saltfish is fish preserved by salting and drying, most commonly cod.

A staple of Caribbean, West African, and Mediterranean cuisines, it requires soaking before cooking to remove excess salt: saltfish and ackee, saltfish fritters.

The preservation method dates to before refrigeration, when salt-cured fish could survive long voyages and tropical climates.
