ackee

Caribbean pod fruit

Ackee is a tropical fruit native to West Africa but most associated with Jamaican cuisine, where it's the key ingredient in ackee and saltfish, the national dish.

The fruit grows in red pods that split open when ripe to reveal creamy yellow flesh and large black seeds.

Only the fleshy arils are edible, and only when fully ripe—unripe ackee contains toxins that can cause severe illness.

The cooked fruit has a mild, slightly nutty flavor and a texture sometimes compared to scrambled eggs.
