andouille
Spicy Creole sausage
Andouille is a coarse-grained smoked sausage, heavily spiced and central to Cajun and Creole cooking.
It appears in gumbo, jambalaya, and red beans and rice: The andouille gave the gumbo its smoky kick.
French in origin, Louisiana andouille differs from its European ancestor—spicier, smokier, made from pork shoulder rather than tripe.
