hydrolysate

Chemically split substance

A hydrolysate is a product of hydrolysis—the chemical breakdown of a compound by reaction with water.

The term appears most often in food science and biochemistry: protein hydrolysates are proteins broken into smaller peptides or amino acids for easier digestion or absorption.

Infant formulas often contain milk protein hydrolysate for babies with allergies.
