goujons

Fried fish strips

Goujons are small strips of fish or chicken, breaded and deep-fried.

The word comes from French, where it originally meant gudgeon—a small freshwater fish traditionally prepared this way.

Now the term applies to any protein cut into finger-sized pieces and fried until crispy: The menu offered cod goujons with tartar sauce.
