flatiron steak

Butcher's blade muscle

A flatiron steak is a cut of beef from the shoulder blade, prized for its tenderness and rich flavor.

The name comes from its roughly triangular shape, resembling an old-fashioned pressing iron.

It became popular in the early 2000s after butchers found a way to remove the tough connective tissue that runs through the middle of the cut: The flatiron steak is best cooked medium-rare.
