reverse-sear
Oven then skillet
Reverse-sear is a cooking technique for thick cuts of meat, especially steak, where the usual order is inverted: the meat is first cooked slowly at low temperature (in an oven or smoker), then finished with a brief high-heat sear for a caramelized crust.
This produces more even doneness throughout than searing first: I reverse-seared a ribeye to perfect medium-rare.
