Fake shellfish meat
Crab stick is a processed seafood product made from surimi—minced white fish that's been shaped, flavored, and colored to resemble crab meat.
Despite the name, it contains little or no actual crab.
Common in sushi rolls, seafood salads, and as an inexpensive substitute for real crab: The California roll is made with crab stick, avocado, and cucumber.
