surimi

Imitation crab base

Surimi is processed fish paste, typically made from white-fleshed fish that's been deboned, minced, and washed to remove fat and unwanted matter.

The resulting bland paste can be flavored and shaped to imitate more expensive seafood—most commonly crab, sold as "imitation crab" or "krab." Originally Japanese, surimi now appears globally in sushi rolls, seafood salads, and as an affordable protein source.
