braisers
Slow-cooking vessels
Braisers are wide, shallow cooking pots with tight-fitting lids, designed for braising—cooking food slowly in a small amount of liquid.
The shape allows meat to be seared on the stovetop before liquid is added and the pot moves to the oven.
Also called braising pans.
A braiser can also be a person who braises: The chef was an expert braiser of short ribs.
