soffritto
Sautéed flavor base
Soffritto is the Italian technique of gently frying aromatic vegetables in fat as a flavor base for soups, sauces, and braises.
The classic combination is onion, celery, and carrot, diced fine and cooked slowly in olive oil until soft and fragrant.
The French equivalent is mirepoix; the Spanish, sofrito.
Start the soup with a good soffritto.
