pasta water
Noodle cooking liquid
Pasta water is the starchy liquid left after boiling pasta.
Cooks reserve it to add body to sauces—the dissolved starch helps emulsify oil and water, creating silkier, more cohesive results: Save some pasta water before you drain the pot.
A splash can also loosen a sauce that's become too thick.
