po'boy

New Orleans sub

A po'boy is a Louisiana sandwich served on a long crusty roll, typically filled with fried seafood like shrimp or oysters, or with roast beef and gravy.

The name supposedly comes from New Orleans restaurateurs feeding striking streetcar workers—"poor boys"—during the 1929 transit strike.

I'll have a shrimp po'boy dressed with lettuce and tomato.
