poorboy

New Orleans sandwich

A poorboy is a large sandwich on a long roll, stuffed with meat, seafood, or other fillings—the New Orleans term for what's called a submarine, hoagie, or hero elsewhere.

The spelling varies: po'boy, po-boy, poor boy.

The classic is fried shrimp or oysters with lettuce, tomato, and mayonnaise.

The name supposedly comes from sandwiches given to striking streetcar workers in 1920s New Orleans.
