panfry

Cook in oil

To panfry is to cook food in a shallow pan with a small amount of fat over direct heat.

The method falls between sautéing (less fat, more stirring) and deep-frying (food submerged in oil).

Panfrying suits foods that benefit from a crisp exterior: panfried pork chops, panfried fish fillets.

Also spelled pan-fry or pan fry.
