panfrying

Shallow oil cooking

Panfrying is cooking food in a shallow layer of hot fat or oil in a pan.

Unlike deep-frying, where food is submerged, panfrying uses just enough fat to coat the bottom of the pan.

The technique produces a crispy exterior while keeping the interior moist: Panfrying the fish gave it a golden crust.
