smoke point

Oil's heat limit

The smoke point of a cooking fat or oil is the temperature at which it begins to break down and produce visible smoke.

Different oils have different smoke points: butter smokes at relatively low temperatures while refined oils like avocado or safflower can withstand much higher heat.

Choosing an oil with an appropriate smoke point matters because overheated fats develop off-flavors and release harmful compounds.

Olive oil has too low a smoke point for deep frying.
